Grilled Peach & Avocado Toast with Cheddar Cheese 焗烤酪梨桃子與巧達起司三明治






If you ask me what my favourite snack is of the season, I'll probably have to give it to this one! It's one of those recipes that was created when my fridge was sort of empty with a few left-over ingredients. You know how sometimes you're craving a snack during the day, but there's not much around to snack on, so you get really creative and throw anything you've got together? This was one of those cases! But it was so good that I've been making this every end of summer during the peach season, and now, you'll also be able to make it. It's slightly sweet and savoury at the same time, which makes a healthy and delicious snack or even breakfast. And because of that, kids will love it, too!





Grilled Peach & Avocado Toast with Cheddar Cheese (2 servings)



4        slices of country-style bread

1/2 T  butter, room temperature

1        avocado, sliced into 1/3"

1        peach, sliced into 1/3"

1 t      maple syrup

1/2 T   butter, cold

6 T      grated aged cheddar cheese

sea salt or flaky sea salt

black pepper

*T = tbsp, t = tsp, C = cup



1. Butter one side of the bread pieces, and set them on a baking sheet.

2. Line and alternate the sliced peach and avocado pieces on top of each piece of bread.

3. Sprinkle a little sea salt and drizzle a little bit of maple syrup over the peach and avocado slices.

4. Thinly slice the cold butter into small pieces and sprinkle on top of the fruits, then sprinkle the cheese on top to finish.

5. Pop it under the broiler for about 4-5 minutes or till the cheese is slightly golden. *Make sure you really keep your eyes on it, so you don't burn the bread.

6. Take it out of the oven, crack some fresh black pepper on top and serve it right away while it's hot!

如果有人問我最喜歡的點心是什麼,我大概會說是這個三明治吧!(ノ_<) 幾年前某天下午突然肚子餓,當時剛般家完沒多久,冰箱的食物並不多,但我想大家都知道,在想吃東西的時候,不管家裡有什麼,都可以把他們拿來做變化,所以這個食譜就這樣旦生了!之後每到這個桃子的季節,我都ㄧ定會做來吃。它有點甜甜的味道,但加上那巧達起司與海鹽又有點鹹味,所以很適合當早餐或點心吃,而且也因為如此,不管大人或小孩都ㄧ定會喜歡!





焗烤酪梨桃子與巧達起司三明治 (2 人份)


麵包                4 片

無鹽奶油 (常溫)  1/2 大匙

酪梨                1 顆…切成約0.8公分厚片

桃子                1 顆…切成約0.8公分厚片

蜂糖或蜂蜜        1 小匙

無鹽奶油           1/2 大匙

巧達起司…削成絲 6 大匙

海鹽與黑胡椒 少許





1. 將烤箱預熱至200C。將常溫奶油分別塗在每片面包上 (只需塗ㄧ面),然後放在烤盤上。

2. 將切片的酪梨與桃子交替放在每片麵包上(請參考圖案)。

3. 在酪梨與桃子上撒ㄧ點點的海鹽、並淋上ㄧ點楓糖或蜂蜜。

4. 將冷卻的奶油切成薄片,放在酪梨與桃子上面,然後撒上起司。

5. 將烤盤放入預熱的烤箱中,烤約5-10分鐘或至上面的起司呈金黃即可。*在國外的朋友們,請使用烤箱的 broil 功能(也就是使用最高溫的熱源直接烤),將烤盤放最上層烤約5分鐘即可。

 
6. 拿出烤盤後,在麵包上撒上ㄧ些黑胡椒,趁熱食用!
