The Macro Bowl








With a busy schedule, one quick thing that I often like to make is the one-bowl meal! It's a great idea for weekdays. I love this recipe from Zach and Ryan's The Juice Truck cookbook (see my book review and more of their recipes here). It's also one of The Juice Truck's top sellers. It's super healthy, satisfying, colourful, tasty, and most importantly, it's really easy to make! The dressing reminds me of Chinese cold sesame noodles. It's so good that you'll want to drink it up or put it on everything! In the recipe, there was no cooking time listed for baking the yam, tofu, and cashews; I would recommend baking the cashews for 15 minutes, tofu for 20 minutes, and yam for about 30 minutes.

Green Spring Sushi Rolls with Miso Tofu and Edamame-Lime Cream 味噌豆干與生菜養生壽司和青檸檬毛豆醬






One of the reasons why I love making vegan/vegetarian sushi at home is because good ones are not easy to find. Typically, rice is one of the key ingredients for sushi, but sometimes I like leaving it out, especially in the spring or summer time. This recipe, which I created for Sabatier Santoku knife, is a really good example! The kale filling gives it a wholesome, crunchy texture and a very refreshing taste, while keeping it light. Since April is Earth Month, I wanted to make something vegan, green and springy. With the rice paper and all the veggie filling, it's across between a spring roll and a sushi roll. Though the roll tastes perfectly good by itself with the miso tofu filling, the edamame-lime cream adds a nice, creamy texture as well as an interesting and subtle flavour. Besides tasting great, it's an excellent way to get your daily veggies!

Edamame and Soba Noodle Bowl with Dulse and Nori 毛豆與海苔蕎麥麵






This was another very quick and easy dish that I whipped up during my terrible flu. It's simple, but still rich in vitamins C, B, K, protein, amino acids, and minerals, which gave me the energy I needed to fight the flu. It took me literally just 10 minutes to make it, with almost no preparation at all. It's super light, delicious, and would make a perfect quick lunch for anyone who doesn't have time. If you have an extra few minutes, steam some vegetables to serve with the noodles, which would make your meal even healthier! So keep some frozen shelled edamame, buckwheat noodles and dried sea vegetables in your house. You never know when they'll come in handy!
