Breakfast Taco with Avocado and Chipotle Bean Salsa + Que Pasa Foods GIVEAWAY 墨西哥(Taco)塔克餅早餐





Every once in a while, I like to have some fun with different ethnic foods, and since Cinco de Mayo is just around the corner, I thought I'd make an easy and tasty breakfast taco recipe. Besides, I really want to share my new favourite organic products with you - Que Pasa tortilla chips and salsas, and when I say share with you, I mean you'll have a chance to win a yummy prize pack that's filled with Que Pasa goodies! (See details below!) This is a great recipe for your weekend breakfast, brunch, or weekday lunch. Even though it's vegetarian, there is plenty of protein in this delicious taco, thanks to the beans, egg, cheese, and avocado! Breakfast Taco with Avocado and Chipotle Bean Salsa (2-4 servings)



4 corn tortillas

4 eggs

1 avocado

flaky sea salt

black pepper

extra virgin olive oil


For the Chipotle Bean Salsa:

about 2 C cooked kidney or black beans (from 3/4 C dried beans) *You may use one 15.5 oz can of beans

1 T    grapeseed oil

1/2 C chopped red onions

A: 1 t       chopped garlic
    4         mini sweet peppers, chopped
    1/2 t    ground cumin

B: 1 1/3 C Que Pasa Organic Chipotle Salsa
    1/2 t    maple syrup (or your choice of sweetener)

juice of 1/2 lime

sea salt and black pepper


For the Garnishes:

1/4 C chopped scallions

12     grape tomatoes, sliced into rounds

A small handful of cilantro


feta or goat cheese, crumbled (about 120 g)

1/2 lime, cut into 4 wedges

*T = tbsp, t = tsp, C = cup


Chipotle Bean Salsa:

1. Drain the home cooked or canned beans and set them aside.

2. In a large skillet, heat the oil over medium low heat. Add the onions with a pinch of sea salt, and sauté them for a few minutes until almost translucent

3. Add ingredients A and cook for another 2 minutes. If necessary, add a little more oil.

4. Add the drained beans with ingredients B. Cook for about 3 minutes until the beans absorb all the flavours. Add the lime juice and check the seasoning. Cover and keep warm while preparing the eggs.


Breakfast Tortilla:


1. Preheat the oven to 200 F/100 C.

2. While the bean salsa is cooking, heat another small skillet over medium heat. Add the corn tortilla to the pan and heat each side for about 30 seconds, one at a time. Wrap them in a clean towel and keep them warm in the oven.

3. In a large non-stick skillet, cook four sunny side up eggs until the whites are almost set and the yolks are still runny.

4. While the eggs are cooking, slice the avocado into 12 slices.

5. When the eggs are done, take out the tortillas and place one egg on top of each tortilla. Then put the avocado slices next to the egg with a generous amount of the bean salsa. Add all the garnishes and finish with a little bit of flaky sea salt, black pepper, and a drizzle of extra virgin olive oil. Enjoy!

*You'll have about half of the bean salsa left. You can simply follow the instructions on the Que Pasa Organic Corn Tortilla Chip bag (see photo below) to make a delicious guacamole and serve it with the leftover beans, more salsa, and some tortilla chips!

今天是墨西哥的「五月五日節」(Cincode Mayo)。爲了慶祝這個節日,第一次在部落格上分享墨西哥口味的食譜( /)u(\ ),而且剛好也可以趁機在這裡向在國外的朋友們介紹我個人最近愛上的幾個有機食品!(*如果您住在美國或加拿大,還可以有機會在這裡贏得價值約$50加幣的有機食品禮盒喔~ 抽獎方式請看下方英文) 這個食譜的做法不但簡單,又非常的好吃,也完全無含肉,是蛋奶素食者絕對會喜愛的,除此之外,也非常適合當假日的早午餐或平時的午餐!



墨西哥早餐(Taco)塔克餅 (2-4人份)

墨西哥玉米餅 4 片

蛋    4 個

酪梨 1 個

粗粒海鹽與黑胡椒

冷抽橄欖油


紅腰豆莎莎醬:

煮好的紅腰豆 (kidney beans) 約2杯或ㄧ個罐頭

葡萄籽油     1 大匙

切碎的洋蔥  1/2 杯

A: 切碎蒜頭 1 小匙
    切碎甜椒 1/2 杯 
    小茴香粉 1/2 小匙

B: 莎莎醬  
1 1/3 杯 *任何品牌都可以,我使用的是Que Pasa Organic Chipotle Salsa 有機辣味莎莎醬
    紅糖 1/2 小匙

青檸檬汁 2 小匙

海鹽與黑胡椒


裝飾:

蔥花 1/4 杯

小蕃茄 12 顆…切片

香菜 一小把

Feta、羊奶酪或任何自己喜歡的起司 *我使用的是羊奶酪

檸檬 半顆…切成4片


紅腰豆莎莎醬:
1. 將煮好或罐頭裡的紅腰豆瀝掉多餘的水份,放置一旁備用。

2. 在ㄧ個大的平底鍋中將油加熱,放入洋蔥與ㄧ點海鹽炒幾分鐘至稍軟。

3. 加入A料炒兩分鐘,有必要的話加ㄧ點油。

4. 加入瀝乾的豆子與B料,繼續煮約3分鐘即可熄火。蓋上蓋子保溫備用。


早餐塔克餅:
1. 將烤箱加熱100 C。

2. 趁莎莎醬還在煮的同時加熱ㄧ個小的平底鍋,放入餅皮將兩面都各加熱約30秒,ㄧ次加熱ㄧ張餅皮,然後趕快以乾淨的布包起來放入微溫的烤箱中以免冷卻硬掉。

3. 在ㄧ個大的不沾鍋中放入四顆蛋煎至半熟。

4. 在煎蛋的同時,將酪梨切成12片。

5. 將餅皮從烤箱中拿出,將煮好的蛋後放在餅皮上,然後放上酪梨與紅腰豆莎莎醬,再放上裝飾食材,撒上粗粒海鹽,胡椒、再淋一點冷抽橄欖油即可食用!
