Two Eggs Two Ways 雞蛋兩吃







Inspired by the halfnhalf eggs (fried egg whites + scrambled eggs) from Weekendbreakfast on Instagram, I made a fried egg and topped it with scrambled eggs (made from a leftover baking mixture of egg whites, some egg yolks, and a little bit of cheddar cheese). It was so yummy with the combination of crispy fried egg, the creamy runny yolk, and the soft curd of the scrambled eggs! Two Eggs Two Ways (1 serving)



2 eggs

sea salt and black pepper

grapeseed oil

1 1/2 tbsp grated cheddar cheese

purple radish shoots or pea shoots for garnish (optional)



1. Beat one egg with a pinch of sea salt and set aside for use.

2. Heat some oil in a frying pan. Crack one egg in the pan, season it and fry it until it's half-way done and the yolk is still runny. Transfer onto a plate.

3. In the same frying pan, heat more oil, and pour in the beaten egg with 1 tbsp cheddar cheese. Scramble quickly and transfer to the top of the fried egg. Sprinkle with more cheddar cheese and garnish with some radish or pea shoots.

做這個蛋的靈感是來自於Instagram Weekendbreakfast 的Halfnhalf Eggs (煎蛋白+炒蛋),我在食譜上稍微做了ㄧ點變化。先煎ㄧ顆蛋,再打另一顆蛋加巧達起司做炒蛋(我剛好之前有剩下一些蛋白與少許蛋黃,就用它來炒蛋)。由於吃起來有外層又香又脆的煎蛋、濃稠的半熟蛋黃汁與軟嫩的炒蛋,非常適合愛吃蛋的朋友們值得一試!喜愛早餐的朋友們也可以到Weekendbreakfast找更多的靈感喔~




雞蛋兩吃 (1 人份)



蛋 2 顆

海鹽、黑胡椒粉少許

油 少許

巧達起司 1 1/2 大匙


1. 將一顆蛋與少許海鹽打散,放置一旁備用。

2. 在鍋中熱一點葡萄籽油,放入一顆蛋,加海鹽與黑胡椒粉煎置半熟後放入盤中(不需要翻面)。

3. 在同一個鍋中倒入更多油,再倒入打散的蛋與1大匙起司快炒至稍微熟軟,取出放置煎好的蛋上,撒上更多的起司與黑胡椒粉調味即可。
