Instant Pot Honey Apple Sauce 蜂蜜蘋果泥 [微電腦節能快鍋版]





Apple sauce is something I always make myself, although it can be found very easily in stores. In the farmer's market here, you can buy a huge bag of local apples (about 12 lb) for just around Can$5, which is so perfect to use for making apple sauce! It's much more delicious, healthy, and economical to make it yourself. There's no fructose, corn syrup, sugar, chemicals (like ascorbic acid), or flavourings added. With the Instant Pot, this recipe I'm sharing is particularly easy. All you need to do is just peel, core, and cut the apples, and let the Instant Pot take care of the rest. Since it's the holiday season, it also makes a wonderful little gift for your friends and family.

Homemade apple sauce also makes a perfect sweet yet healthy snack for you and your little ones. Since it's super healthy, I often take spoonfuls of it right out of the jar if I have sweet tooth. You can pair it with anything you'd like, from yogurt, nut butters, pancakes, muffins, oatmeal…etc., it's all good! There are quite a few versions of recipes out there. This recipe requires very few ingredients. While some versions have sugar, others don't, and some have spices like cinnamon. I love cinnamon, but when it comes to apple sauce, I like to keep it simple, so I can appreciate the pure taste of apples with just a little hint of honey. Since this recipe lets the taste of the apple comes through, it's nice to mix different varieties of apples together. Don't be afraid to play around and test out different mixes. Sour variety apples might require less lemon or a bit more honey. The result of different mixes can come out quite different, so be sure to take a note each time and compare.



雖然蘋果泥在超市裡很容易就可以買的到,但我ㄧ向就喜歡自己做。在這裡的傳統市場裡可以買到當地的蘋果,而且很多時後,只要加幣約$4塊錢 (約新台幣115)就可以買到ㄧ大袋(5公斤)!這些蘋果又大顆又甜,只是外表稍微有點瑕疵,攤販就會把它們放在ㄧ起以便宜的價格賣出。這樣的蘋果不但可以拿來直接食用,也非常適合用來做蘋果泥、蘋果醬或其它烘焙甜點。自己做的蘋果泥不但經濟、也較好吃又健康。這個食譜完全不含糖、寡糖、糖漿、與任何的化學成份。由於我是使用微電腦節能快鍋來製做,使其做起來更方便又容易。只要將蘋果去皮去籽並切塊後就可以放入微電腦節能快鍋內讓它幫你完成。


蘋果泥的製法有許多種,我的食譜只需要簡單的幾樣食材。有的食譜加了糖與肉桂,雖然我很愛肉桂,但我比較喜歡帶有純蘋果味的蘋果泥,只在裡面加了ㄧ點香草醬。我建議採用不同品種的蘋果來做蘋果泥,並嘗試不同的搭配。若是使用較酸的蘋果,也許就少放ㄧ點檸檬或多加ㄧ點蜂蜜。因為品種的不同,做出來的蘋果泥味道也會因此而異,所以在嘗試不同搭配的時候可以做筆記並比較看自己喜歡哪一種。



Instant Pot Honey Apple Sauce (makes about 6 cups)



5 lb/2.25 kg apples *I used a mix of Cortland, Lobo and McIntosh, but feel free to use your own mix.

A: 2    T  lemon juice
    1/4  C  non-alcoholic apple cider or apple juice
    1     T  honey
    pinch of sea salt

*T = tbsp, C = cup



1. Wash and scrub apples well under hot water.

2. Peel and core the apples, then cut them into thick slices. 

3. Put apples and ingredients A in the Instant Pot together. Close the lid and put on manual for 6 minutes. Be sure to check your steam vent is sealed.

4. When finished cooking, turn it off and "natural release" the pressure.

5. Carefully open the lid. 
For a chunky texture like I have here, use a potato masher to gently mash the mixture, then ladle it into glass jars to store.

For a slightly chunky texture, use a potato masher to gently mash the mixture several times. Then use a handheld blender to pulse a few times. Pour the mixture into glass jars to store.

For a smooth texture, don't bother to mash it; blend everything until the texture is smooth. Store it in jars.



Storing option:

Canned: Can be stored in a dry, cool place for about 2 years. For detailed instructions on home canning, please read here.

Frozen: Can be stored for up to 1 year.


Refrigerated: Can be stored for a week.



Variation:

Apple Sauce with Vanilla: Add 1/2 t vanilla paste with the rest of the ingredients.

蜂蜜蘋果泥[微電腦節能快鍋版](6)



蘋果 2.25 公斤/5 *我建議使用不同品種的蘋果,味道會更特別!

A: 檸檬汁  2 大匙
    蘋果汁  1/4
    蜂蜜     1 大匙

    海鹽     少許


1. 蘋果洗淨後,削皮去籽並切成厚片。

2. 將蘋果與材料A全放入微電腦節能快鍋中,鎖上鍋蓋,使用手動設定6分鐘。

3. 煮好後關機,待電鍋自然洩壓後小心打開鍋蓋。

4. 使用馬鈴薯壓泥器將煮好的蘋果壓幾下然後攪拌均勻。

顆粒狀蘋果泥:直接將以上完成的蘋果泥倒入消毒的玻璃瓶中保存。(我在這裡做的就是稍微有顆粒狀的蘋果泥,因為它是較傳統的吃法,而我個人也比較喜歡吃起來有質感的蘋果泥,如果不喜歡這樣的質感,可以參考以下另外兩種做法。)

微顆粒狀蘋果泥:蘋果煮好後,以食物調理機稍微打幾下,再倒入消毒的玻璃瓶中保存。

細緻蘋果泥:蘋果煮好後,以食物調理機打至細,然後倒入消毒的玻璃瓶中保存。



保存方式

真空罐裝:儲存在乾燥又溫度較低的地方可以保存約2年。

冷凍:可保存至1年。

冷藏:可保存ㄧ星期。


食譜變化:

香草蘋果泥:加入1/2 小匙的香草精與蘋果和其它食材ㄧ起煮。
